Ethan+Ashe Bitters No. 1

Bitters are most commonly associated with the most popular brand in the category, Angostura, which is named after the Venezuelan city where they were first created. Angostura closely guards their family recipe to this day, but a host of new bitters brands have become popular with bartenders in the last few years. Brands like Regans', Bittermans, Jack Rudy and The Bitter Truth have introduced exotic bitters like Xocolatl Mole, Celery and Curry.

Our house bitters recipe imparts a rich, vibrant flavor to any cocktail and is our go-to bitter for our favorite classic – the Manhattan.

INGREDIENTS

  • 750ml high-proof bourbon (or vodka)
  • 18 Cardamom pods
  • 4g coriander seeds (crushed)
  • 3g gentian root
  • 3g cherry bark
  • 3 star anise
  • 4g chinchona bark
  • 4g cassia
  • 2 allspice berries
  • 1 pinch mace (crushed)
  • 6 cloves
  • 10g dried lemon peel
  • 10g dried orange peel

INSTRUCTIONS

  • Infuse: 4 weeks
  • Add 2 TBL Grade A Dark Amber maple syrup
  • Stir well
  • Store in bitters bottle
